Found a relative low mileage 1000S, what are the problem areas to look for? From what I understand it is valve guides, what's the symptoms, white smoke? Also leaking gas tanks or was that the earlier years? What about instrument cluster, read somewhere they're problematic as in fuel gauge way off, wrong mileage and susceptible for water damage. Anything else I should be aware of?

You basically have all the things to look out for. Some owner's valve guides were bad without showing any symptoms, but generally hard starting, poor running at low rpm, oil consumption are signs of bad guides. Mine were replaced at ~6,000 miles. The service bulletin gives engine numbers that MAY need valve guides replaced. If you're concerned have a good Ducati shop check them out before purchase.
Leaking gas tanks seem to occur under all model years.
The gas guages, from what I understand, work more accurately starting with the '07 models. There is no real fix for it other than relying on the tripmeter as your gas guage. I've gotten stuck in some pretty horrendous downpours and haven't had any issues with my instrument clusters. I believe I've seen more posting with instrument cluster issues on '07 and later models. These seem to get taken care of under warranty.

well looked at the bike today and took a very short testdrive (no insurance) but it felt, sounded and looked great. Also had a set of Arrows system. It took a few seconds to start up but seems it's been sitting for a little while. I'm going to check with nearby shop how common the valveguide problem is and if there's any help in case they are/go bad. It also felt soooo much lighte and lower seat height than my prev 950 Adventure.
